The emphasis is on realistic, enjoyable changes that can be woven easily into daily life.
You will learn how to make delicious juices and smoothies, grow simple sprouts and microgreens at home, prepare satisfying salads and dressings, create comforting raw soups, and make naturally sweet desserts using whole-food ingredients. The day is designed to be encouraging, accessible and deeply practical, helping participants discover that healthy food can be simple, affordable, nourishing and full of vitality.

This one-day course focuses on the foundations of vibrant plant-based living, beginning with one of the most overlooked aspects of health: hydration. Participants will explore the importance of water for energy, cleansing and digestion, and will be introduced to the concept of “living water” found naturally in fresh fruits and vegetables. Simple, achievable hydration habits will be discussed as a starting point for better health.
 A central part of the day is understanding the value of living foods and how they can support the body in a lighter and more natural way. Helen will show how fresh fruits and vegetables can begin to replace heavier foods, making meals feel both nourishing and satisfying. The teaching is grounded in simplicity, helping participants see how small dietary shifts can make a meaningful difference over time.
 Practical food preparation is woven throughout the day, with demonstrations of juices, smoothies, sprouts, microgreens, salads, dressings, raw soups and healthy date-based desserts. Participants will learn how to prepare foods in ways that support digestion and enjoyment, including the importance of soaking nuts and seeds, and using fresh, organic, whole-food ingredients. Tasting and discussion help bring the teaching to life and make the experience interactive and memorable.
